This almond flour cookie recipe already has a good vegan base, but there are a few alternatives you can choose to make sure it’s all vegan!

  • Vegan chocolate chips. Sometimes I chose to do a vegan version of this cookie recipe, and when I do I use this brand of vegan chocolate chips.

  • Flaxseed “egg”. It’s so easy to make your own flaxseed “egg” mixture to act as a binder these almond flour chocolate chip cookies. All you need is one tablespoon of ground flaxseed and three tablespoons of water. You mix them together and let it sit in your refrigerator for 15-20 minutes to firm up, then you have your flaxseed egg!

  • Coconut oil. I love using coconut oil in place of just about anything that calls for butter when I can. You can get an unrefined coconut oil to use for all kinds of almond flour cookies here. It tastes amazing, plus there are other benefits to coconut oil. You can eat it, but it’s also great for your hair, skin, and nails too!

  • Coconut sugar. Some of the processing that goes into making brown sugar isn’t conducive to a vegan diet. Coconut sugar is the perfect 1 to 1 substitute and when I use it for my almond flour cookies I use this brand.

Double Chocolate Chip + Cinnamon Almond Flour Cookies

Instructions

  1. Preheat oven to 350 degrees. 
  2. Use a non stick cookie sheet if possible. If not, lightly grease the bottom of a flat pan with coconut oil. 
  3. In a mixing bowl add coconut and oil brown sugar (or substitute). Mix with a hand mixer. 
  4. Add egg (or substitute) vanilla extract, and cinnamon. Mix well. 
  5. Slowly add almond flour, ensuring it is mixed well little by little. 
  6. Add in chocolate chips (or substitute) 1/2 a cup at a time. Mix by hand or using a spatula. 
  7. Scoop out 1 1/2 tbsp. cookie dough and place 1 inch between scoops. If you like your cookies shaped like mounds leave them like they are when scooped out. If you want flattened cookies flatten the tops by using a spoon. 
  8. Place in the oven. Cook for 10-12 minutes until slightly brown on top. Do not over cook. 
  9. Cookies will feel dry and slightly crisped on top, but soft to touch. Let cool for 5 minutes before removing from cookie sheet. 
  10. Voila. You're all done!

Storage

Store these cookies for up to 4 days in a cool, dry place at room temperature. To save left over dough, freeze for up to 3 months.
