When you want to make a comforting meal for yourself or your family that’s packed with the good stuff like veggies, it’s perfectly fine to opt for frozen vegetables. They’re a great way to get the nutrients you need and save time when cooking up something good to eat.

If you’re a a millennial, chances are you’re busy. We’re always on the go, we’re entrepreneurs, we work full time jobs, and simply put, we’re chasing our dreams. Throw in the responsibilities of being a wife, a mom, or a caretaker to someone, it goes without saying that our time is precious.

In this post I will continue to reveal some of my easiest, fastest, and cheapest meal hacks. In my previous recipe post on how to use frozen cauliflower rice to make a great fried rice meal, I’ve shown you how frozen vegetables can go a long way in the kitchen. Comfort meals are a favorite in my home, and I love to eat them. However, I don’t have a ton of time to spend in the kitchen when I want to hook up a great meal for me and my family. I’m always relying on frozen vegetables as a staple in most of my recipes, and my easy chicken pot pie is no exception. I’m going to share with how you can use frozen vegetables to make this flaky, creamy, dreamy goodness in about 30 minutes!

Frozen vegetables are great to use in many recipes for several reasons.

  1. You don’t have to worry about washing them.

  2. Frozen vegetables are time savers because they don’t have to be chopped.

  3. They promote healthy eating, just like fresh veggies.

  4. Frozen vegetables are generally more budget friendly, and last longer than fresh veggies.

Here’s how you can use frozen vegetables to make chicken pot pie!

You’ll first need to gather your needed hardware and materials.

Materials needed:

  • Deep baking dish

  • Skillet

  • Spatula

  • Large mixing bowl

  • Cheese grater

Ingredients you’ll need:

  • 1 bag frozen diced chicken

  • 1 bag frozen vegetables with peas and carrots (microwaveable)

  • 1 bag frozen rice (microwaveable, optional)

  • 1/4 cup pre-diced onion

  • 1/4 cup pre-diced celery

  • 1/2 cup heavy whipping cream

  • 1/2 cup shredded white cheddar cheese

  • 4 sheets refrigerated pie crust

  • 1 tsp of salt

  • 1 tbsp of pepper

  • 1 tbsp of garlic powder

  • 1 tsp celery salt

  • 2 tbsp of olive oil

  • fresh, chopped parsley (optional for garnish)

Instructions to make Chicken Pot Pie:

  1. Pre-heat oven to 350 degrees, or as directed on refrigerated pie crust instructions.

  2. Place one tbsp of olive oil in frying pan over medium heat. Add pre-diced onion and celery to cook. Once translucent remove from heat.

  3. Add remaining tbsp of oil to skillet. Add chicken to cook. Once chicken begins to brown, add cooked pre-diced onion and celery. Cook chicken to completion and remove skillet from heat.

  4. While cooking chicken place frozen vegetables in microwave too cook. Once completed, add frozen rice to microwave to cook.

  5. In a large mixing bowl add cooked chicken mixture, cooked frozen vegetables, and cooked rice.

  6. Season mixture in the large mixing bowl with salt, pepper, celery salt, garlic powder and mix all ingredients.

  7. Add whipping cream and grated cheese. Continue to mix thoroughly.

  8. Set mixture aside and handle refrigerated pie crust as directed. Cover the entire bottom and sides of deep baking dish with pie crust.

  9. Add mixture to baking dish so it fills the pie crust. Grate a small amount of cheese to place atop the mixture.

  10. Place remaining pie crust over the top of the mixture, ensuring it is completely covered and secured. Place baking dish with chicken pot pie into oven.

  11. Cook according to refrigerated pie crust instructions. Before removing, be sure pie crust has thoroughly cook through and is flaky.

  12. Remove from heat and garnish with freshly chopped parsley (optional).

  13. Let cool 10 minutes before serving.

Once you’ve cut into this mouth, watering mound of goodness called chicken pot pie and have tasted it, you won’t even know that it was made with frozen vegetables or other frozen products!
