You may be like me and still trying to reach your goal weight after baby, or maybe you’ve reached your goal weight but just trying to keep it all right and tight. Fad diets aren’t for me, and I’ve learned what does work is eating what I like, that’s healthy, in moderation. Baked fish tacos are a favorite of mine, and I love salmon - especially the bourbon salmon filets from Publix. I need meals that are not only tasty, but that are quick to make. This easy 5-ingredient baked salmon tacos recipe will blow your mind! With lots of flavor but very little time or effort required, you’ll find that this will be a favorite fish taco recipe that you’ll have on repeat!

5-Ingredient Baked Salmon Tacos

This recipe has ingredients for 2 people. You’ll need:

  • 2 pieces of Bourbon Salmon from Publix

  • 6 corn tortillas (3 tacos per person)

  • 1 avocado

  • 1 bunch of cilantro

  • 2 limes

  • 1 pinch of chili powder (optional)

  1. Pre-heat your oven to 350 degrees and follow the package instructions for baking the salmon.

  2. While salmon is baking, finely chop cilantro and slice avocado. Set aside.

  3. Char all six corn tortillas on top of a gas stove. It take about 45-50 seconds to obtain a nice char on both sides. Use medium heat, but be careful to watch! Set aside once charred.

  4. Once baked salmon is finished, break apart into large meaty flakes. Place lumps of baked salmon atop each corn tortilla.

  5. Place avocado slices and cilantro on top of salmon.

  6. Slice 2 limes into wedges. Squeeze your desired amount of lime juice onto each baked salmon taco. Use the left over wedges for garnish.

  7. Sprinkle each taco with a pinch of chili powder (optional)
