The Fastest Fried Rice Recipe Using Frozen Cauliflower Rice

If you follow me on Instagram you know that I’ve asked if you’d be interested in some fast, easy meals you can make for your family on a budget. This is my first one- a fried rice recipe using frozen rice and frozen cauliflower rice. I make this often for my family and it takes no more than 30 minutes from start to plating. What I love most is that it’s not only filling, but it’s got veggies and doesn’t take much to make it look gourmet. Plus, if you’re keto, you can make use of the frozen cauliflower medley to sub for the additional rice to make your own keto fried rice! Let’s get into how you make this beautiful mound of goodness!

Here’s how you can make a fast and inexpensive fried rice using frozen cauliflower rice!

Hardware you’ll need:

  • A large skillet or wok

  • spatula or spoon

  • a microwave (for your frozen cauliflower rice)

Ingredients you’ll need to serve 4 people:

  • 1 package of chicken breast tenders to cook (or 1 chopped store bought rotisserie chicken)

  • 1 package frozen cauliflower rice medley (with peas, carrots, and green onion)

  • 2 packages frozen rice (brown, white, or both) with mixed vegetables

  • 1/4 cup diced onion (already packaged and pre-diced from the store)

  • 1 tsp ground ginger

  • 1 tsp salt and

  • 1 tsp pepper

  • 2 tsp onion powder

  • 2 tsp garlic powder

  • 1 tbsp low sodium soy sauce

  • t tbsp sesame oil (for finishing)

  • 3 tbsp olive oil

  • 2 bulbs chopped green onion (for garnish)

  • 1 package frozen spring rolls or egg rolls (optional)

Steps to make this fried rice recipe:

  1. Pop the frozen cauliflower rice medley into the microwave. It takes about 4 minutes

  2. Season chicken if you got the chicken tenders to cook using dry seasonings. If you got a cooked rotisserie chicken from the store chop it up and add dry seasonings.

  3. Remove cauliflower rice medley from microwave and add first bag of frozen rice to cook. Once finished, add the second bag of frozen rice to cook.

  4. Heat 2 tbsp olive oil in skillet or wok using medium heat, then add chicken. Allow chicken to cook. Tenders usually take about 7 minutes for 5-6 of them. If using rotisserie chicken slightly heat chicken to get the outsides just a little crispy which takes maybe 2 minutes.

  5. Remove finished chicken from skillet, turning heat to low. If using tenders, coarsely chop them into bits. Allow chicken to rest for 2 minutes.

  6. Add remaining tbsp of olive oil to skillet and turn heat back to medium. Add diced onion and cook until translucent. Add in cooked frozen cauliflower rice, then the other two bags of rice with veggies. Next, add the chopped chicken and mix it frequently to prevent rice from sticking. Turn heat to low.

  7. Add soy sauce and mix thoroughly to allow to cover all rice and chicken. Feel free to add more soy sauce to personal taste!

  8. Once finished mixing, add sesame oil and mix thoroughly. Turn off heat.

  9. Chop green onion to garnish on top of fried rice.

  10. Serve with egg rolls (optional)
